Owner Jiro Ono continued to make sushi even past the age of 90, and his figure was conveyed to the world through a documentary film, gaining international recognition. Currently, his sons inherit his techniques and philosophy.
Unwavering Precision Created by Repetition
There is no flamboyant presentation in Jiro's sushi. Seasonal seafood sourced from the market is aged and prepared according to each, then completed as a single piece in optimal condition with the shari. Repeating this simple process daily for decades is what has created precision that admits no imitation. The words attributed to Jiro Ono, "You have to fall in love with your work with all your heart," are known as teachings that go beyond the mindset of a sushi chef and apply to any work.
Conversation exchanged across the counter is minimal. Eliminating waste, the very design of time that concentrates on a single piece of sushi embodies this restaurant's philosophy.
